Bennigans was established in 1976. It’s a high-energy neighborhood restaurant that is focused on the people, food and experience. They have numerous stores all over and have decided to add a BBQ trailer in the mix. Bennigans partnered with Concession Nation in 2014 to build a stellar 8×30 BBQ trailer.

Big D’s BBQ, located in GA had an awesome 8×24 BBQ trailer built by Concession Nation in 2014. Big D’s restaurant is family owned southern BBQ style that serves homemade country breakfast, lunch and dinner 7 days a week. They also cater events small to large all over the Southeast. In 2008 they were named Best New Restaurant and Best of the Best BBQ by The Atlanta Journal & Constitution. From 2009-2019 they were voted Best BBQ and in 2013 Best BBQ in Georgia by Georgian Magazine. In 2015-2016 they were voted Best Breakfast. In 2017- 2019 they were voted Best Take-Out and Best Caterer.

Clean Harbors is North America’s leading provider of environmental, energy and industrial services. Clean Harbors also is North America’s largest re-refiner and recycler of used oil and a leading provider of parts washers and environmental services to commercial, industrial and automotive customers. Founded in 1980 and based in Massachusetts, Clean Harbors operates throughout the United States, Canada, Mexico and Puerto Rico. They reached out to Concession Nation in 2012 to build an awesome 8×24 trailer.

Luwani’s BBQ had an incredible 8×20 trailer built by Concession Nation in 2013. Under their 7′ hood includes a griddle, 4 burners, work tables, refrigeration, and a porch that has their grill on the back. Having a porch can make the interaction with customers a little more personal and entertaining.

Road Hawg BBQ in NH, had a spectacular 8×28 BBQ trailer built in 2013. Business evolved and they were able to open a brick & mortar. Their trailer had the works, it included, deep fryers, steam table, prep stations, refrigeration, shelving, work tables, a bathroom, and an enclosed porch with barn doors. They also had a beautiful custom wrap with a custom sign.

The Seminole Casino Immokalee contacted Concession Nation in 2013 to build a fantastic 8×24 BBQ trailer. This beauty is fully loaded that includes, a griddle, broiler, 6 burner stove top, deep fryers, refrigeration, an ice cream machine, plenty of work tables and shelving space, and a porch that includes their BBQ grill. to top it all off they had an awesome custom full wrap.

Smokin Joe’s BBQ trailer reached out to Concession Nation to build a tremendous 8×30 BBQ trailer inn 2012. This trailer includes a 24” 4 burner stove top, 24″ griddle, deep fryers all under the 7′ hood. It also includes a proofer heater, ice bin, plenty of work tables and shelving, a rear opening for their BBQ pit, and an awesome custom wrap.

The University of Wisconsin had a cool 8×26 trailer built by Concession Nation in 2010. The University uses the trailer to provide their employees and students with fresh and nutritional meals. This trailer includes a 24″ griddle, 36″ 6 burner stove, deep fryers, refrigeration, food warmer, proofer heater, prep stations, plenty of work tables and shelving, an awning, and a rear pit for BBQ.

Barbecue’s history, predominantly in the southern states of America, dates back to the colonial days.  Large gatherings have included this southern staple since as early as the very first celebration of our nation’s Independence Day.

Main regions of BBQ styles include:

  • Memphis–“This town’s big on pork, whether it’s in rib or pulled form, and usually uses a dry rub that includes garlic, paprika, and other spices.” (Thrillist)
  • North Carolina–“usually pork, served pulled, shredded, or chopped, but sometimes sliced. It may also be rubbed with a spice mixture before smoking and mopped with a spice and vinegar liquid during smoking.” (Wikipedia)
  • South Carolina – “barbecue is characterized by the use of a yellow “Carolina Gold” sauce, made from a mixture of yellow mustard, vinegar, brown sugar and other spices.” (Wikipedia)
  • Texas–Has four regions:
    • Central Texas:“The meat is rubbed with only salt and black pepper or in some restaurants with spices and cooked over indirect heat from pecan or oak wood or mesquite wood or a combination of woods. Sauce is typically considered unneeded but may be served on the side.”
    • East Texas: “The meat is slowly cooked to the point that it is “falling off the bone.” It is typically cooked over hickory wood and marinated in a sweet, tomato-based sauce.”
    • West Texas: “The meat is cooked over direct heat from mesquite wood.”
    • South Texas: “Features thick, molasses-like sauces that keep the meat very moist.”
  • Kansas City:“no meat is off-limits (owing to the city’s status as a meatpacking hub), and it’s all cooked super-slow and super-low, preferably over hickory wood. The sauce is most commonly a thick, sweet molasses-and-tomato concoction that sticks to ribs of both animal and man.” (Thrillist)
